Pans and Molds
Cake pans, bread pans, and molds
They come in various shapes and sizes. Depending on how you plan to employ these in your production depend on the type you need. There are as many shapes and designs as there are ways to fill them. When preparing to use them you should butter the interior and sift flour to prevent sticking. You may also cut a parchment paper circle, or other shape, to place on the bottom of the cake pan to lessen the chances of sticking. Usually referred to as preparing your pans, this step is also included in the mise en place stage.
