Calculating Bakeshop Edible Portion (EP)
Example 1: Mary is planning to bake an Apple Pie. How many pounds of apples does she need to purchase if the recipe requires 2lb 4oz (36 ounces) chopped and peeled apples?
The yield percentage of an apple is 75Y% (.75)
The Math formula to use to determine the quantity needed to purchase the ingredient:
EPQ/ Yield Percent =APQ
plug in the numbers: 36 ounces/75% (.75) = 48 ounce (3 pounds)
Example 2: Assume you have the following quantity of Mangoes: 3 pounds
Calculate the (EP) weight you will have after trimming.
Mangoes Yield percentage = 75%
The Math formula to use to determine the edible portion weight:
edible portion weight (EP)=As Purchased (AP)×Yeild Percentage (Y%)
(EP)=(AP)×(Y%)
Plug in the numbers: 3 pounds (48 ounces) x .75 = 36 ounces (2 lb. 4 oz.)
